What’s your name and where’d you come from?
My name is Jo Thompson and I am Bristol born and bred! I am the owner and roaster of Triple Co Roast, in which I started last year.
Tell us the Triple Co Roast story.
TCR has its origins out in northern California, where I was learning coffee and roasting. I originally went to study, but coffee took over! I had some friends doing the same thing in the states and got mega inspired, and so I decided to give up studying/a Chemistry degree for the bean. I came home with a plan, and launched it. Ever since then its been going off!
Triple because of the three core values I want the company to stand by. Firstly, sourcing only high quality and speciality green. We are methodical and scientific in our approach. We’re looking for that fruitiness! Secondly, sourcing via direct trade. We want to get as close to the farm as possible in order that premiums be handed back to farmers, not middle men. And lastly, we want to be open access and accessible. One of the reasons I was able to get into coffee was the openness of other roasters in California.
Our roastery is in a shop where you can come in and watch whilst sipping a coffee in hand.
What's exciting about the Panama Natural?
The Panama Natural is beautiful cocktail of blackberry, red fruits and agave. The farmers have taken a lot of care in the processing of this bean, resulting in a very clean natural. We love it.
Favourite bar in Stokes Croft?
Fav bar in Stokes Croft has to be Crofters Rights - Amazing selection of crafty beers, I once had a marshmallow ale.

Espresso martini or coffee stout?
Coffee stout all day, espresso martinis are too sweet for me!
